Last week I was craving peanut butter cookies. The craving was probably inspired by several jars of peanut butter that I'd gotten on sale which were languishing in the pantry.This is my own adaptation of a recipe I found online; it resembles the original version very little as I attempted to replace the shortening and white sugar with items that were a bit healthier. I want to begin experimenting with using honey as a sweetener instead of sugar, so incorporated just a bit of it into this recipe. The taste and texture of these cookies was good and they totally fulfilled that craving!
Peanut Butter Cookies
1/2 cup butter, softened
1/2 cup coconut oil
1 cup turbinado sugar
1/4 cup brown sugar
1/4 cup honey
2 eggs
1 cup creamy peanut butter
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
Cream butter, coconut oil, sugars and honey. Add eggs and blend well. Beat in peanut butter and vanilla until smooth. Stir in dry ingredients until well blended.
Scoop out tablespoonfuls of dough and roll them into balls. Place on a lightly-greased cookie sheet about two inches apart. Press tines of fork onto each cookie, flattening slightly.
Bake at 375 degrees for 7-9 minutes or until lightly browned. Allow to cool on cookie sheet for two minutes. Remove to wire rack to cool. Store in an airtight container.

You know, I never knew what turbinado sugar was before, but I believe we have it here under a different name - demerara sugar. This recipe sounds delightful, I must try it... My husband is a HUGE P.B. fan!! :) Thanks for sharing, Tracey!
