E-Mealz and Enchilada Casserole

If you've ever listened to Dave Ramsey's radio show, you've probably heard a commercial for E-Mealz.  Thanks to a giveaway Amanda hosted, I won a free three-month subscription to E-Mealz! 

After hearing those ads umpteen million times, I was excited to see how it worked.  I started the plan last week.  I selected the family meal plan for Publix from several options that are available, based on dietary preferences and grocery stores you frequent.  I was pleased to see that the suggested meals are relatively healthy and use common ingredients.

I tried my first recipe from their recommendations for supper Saturday night.  It was this enchilada casserole and it was delicious!  I made only slight modifications - one of them being using large tortillas, as that's what I had on hand.  You could certainly substitute smaller ones, or use corn tortillas instead of flour.  I also substituted black beans that I had cooked from dry and frozen for the canned variety.

Enchilada Casserole

1 cup onion, chopped
2 tablespoons olive oil
2 10-ounce cans enchilada sauce
16-ounce can black beans, rinsed and drained
1 ½ cans diced Rotel tomatoes
11-ounce can Mexican style corn, drained
1 teaspoon chili powder
1 teaspoon ground cumin
5 large flour tortillas
1 pound ground beef, browned
3 cups shredded Mexican cheese

Saute onion in hot oil in skillet until tender. Stir in next 6 ingredients (through cumin). Reduce heat and cook 5 minutes, stirring often, to heat through. Tear flour tortillas in half. Spoon 1/3 of sauce mixture into bottom of lightly greased 9x13-inch dish. Layer three tortilla halves, half of beef and one cup cheese. Repeat.  Top with three more tortilla halves, remaining sauce and cheese. (You will end up with one extra tortilla half which can be saved for another use.)

Bake at 350 degrees for 15-20 minutes or until golden and bubbly.

I served this casserole with fresh fruit.  Since our daughters didn't eat much, there was plenty for leftovers and it was nearly as good when reheated for another meal.

As I get further into the E-Mealz plan, I'll let you know what I think of it and share any other recipes that turn out to be winners!

  1. What a neat prize to win! This dish sounds yummy ~ I love anything I can throw black beans into! I've always been a taco girl but recently have been introduced to the enchilada world. =) I had very simple tastes in my younger days, but I'm so thankful my tastes are expanding! Thanks for sharing!

    I really like black beans, too. Our daughters are slowly joining us in our appreciation of Mexican food. They both like tacos and quesadillas now, but we're still working on other dishes. :)

  3. Yum! I love Mexican food and am always searching for fabulous, new dishes to try. I also love black beans so I will be going with your modifications.

    Did you know black beans help reduce headache pain? I heard it a while back and started eating black beans, along with my standard spinach dishes, when a headache would start to surface (I suffer from migraines). I can tell a small difference, but it's enough difference to make sure my pantry is always stocked.

    How interesting!! I don't have severe migraines, but do get some very painful headaches every month. I'll have to remember to keep plenty of black beans on hand!

  5. Dan would really love this meal! Me... not so much. :P He can't understand why I'm not a huge fan of Mexican food. What can I say? I grew up on an island continent - not next-door neighbours with Mexico!! ;)

    Understood! We don't eat Chinese food, although we are fans of Japanese dishes. I promise not to serve this if you ever come to visit! :)

  7. LOL! Thanks Tracey! You know what's interesting about dishes cooked in USA compared with ones cooked in Australia? (Talking about meat, dairy etc meals mostly here) Even if you use the exact same recipe and try to get very similar ingredients, the dishes taste quite different in USA from how they taste in Australia. American cheese tastes different from Aussie, American meat tastes different (sometimes vastly different), and some ingredients required for meals are just not available or the substitute is different and makes the meal taste totally different... Even McDonalds tastes a LOT different in USA from Australia (I never ate it in USA, but my husband said Australian McDonalds is a LOT more healthy and tastes MUCH better - less additives in Australia, more natural flavour, apparently)!
    Anyway, all that to say that Dan misses Mexican food from the USA - it just doesn't taste the same here!!

  8. I used e-mealz for a while, and I liked it. Most of the recipes were pretty good, and a few have become some of our favorites. I cancelled my subscription when my younger daughter was born last year because I stopped using it: people were so generous bringing us meals and I had so many in the freezer that I wasn't cooking from scratch at all. Very nice!
