Peach Crisp

Few things say summer like the taste of a ripe, juicy, South Carolina peach! 

Since I've had an abundance of peaches lately, I've been making peach cobbler and peach crisp.  The best recipe I've found so far is one from All Recipes that I adapted slightly.

Peach Crisp

4 cups peaches, pitted, peeled, and sliced
2 tablespoons lemon juice
3 tablespoons sugar
1/2 cup rolled oats
1/4 cup brown sugar
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
1 pinch salt
1/4 cup butter

1.Preheat oven to 350 degrees.

2.Combine peaches, lemon juice, and three tablespoons sugar in a 7x11 baking dish.

3.In medium bowl, combine oats, brown sugar, flour, cinnamon and salt. Cut in butter with fork or pastry blender until mixture resembles coarse crumbs. Sprinkle over fruit.

4.Bake in preheated oven 30 to 35 minutes or until topping starts to brown. Serve warm.

We ate this topped with homemade vanilla ice cream!

  3. Just made a wonderful peach-mixed berry crisp myself. My recipe came from this month's All You magazine. I live in NC, and I love SC peaches, too!
