I don't know that I could cook a tasty pork chop if my life depended on it.
It's a meat I've never mastered. I have finally given up cooking pork chops as they always turn out dry and bland.
For the first ten years of our marriage, I could have said the same about my pot roast. Then my husband got a recipe from a friend whose pot roast he'd eaten and it actually worked for me!
However, that recipe, while delicious, requires 2 1/2 hours in a 350 degree oven. Another friend told me she had success cooking roast in her slow cooker, so I tried that, and was happy to find that letting it cook on low all day produced as tender a roast as my original recipe.
This particular recipe is a combination of several that I've tried - and it hasn't failed me yet!
Italian Pot Roast
2 to 3 pound roast
1/2 cup water
1 1/2 teaspoons garlic powder
1 tablespoon onion powder
2 teaspoons oregano
1 tablespoon Italian seasoning
2 teaspoons salt
1 teaspoon pepper
Potatoes, onion, and carrots cut into cubes
Place roast in slow cooker. Add 1/2 cup water to bottom of slow cooker, then sprinkle roast with seasonings. Add chopped vegetables. Cook on low for 6-8 hours.

I haven't tried a roast in a long time, and this reminds me that I need to. And I'll have to give your recipe a try!
