Cheddar Chicken

Last night, I tried a recipe I found in an old copy of Real Simple magazine - Cheddar Chicken.  Since I like almost any meal that includes cheddar cheese, I hoped it would be a hit with the rest of the family!  After following the simple directions, the chicken came out of the oven moist and flavorful.

For the crushed crackers, I used saltines as that was what I had in the pantry.  I sliced the chicken breasts fairly thin, so they were perfectly done in about 20 minutes.

Cheddar Chicken

Ingredients:
  • 16 buttery crackers, crushed (about 3⁄4 cup)
  • 6 ounces Cheddar cheese, grated
  • 1 clove garlic, finely chopped
  • salt and black pepper
  • 4 6-ounce boneless, skinless chicken breasts
  • 4 tablespoons unsalted butter, melted

Directions:
  1. Heat oven to 350° F. In a bowl, combine the crackers, cheese, garlic, and ¼ teaspoon each salt and pepper.
  2. Dip the chicken in the butter, then in the cracker mixture, pressing gently to help the crackers adhere. Place the chicken on a foil-lined baking sheet.
  3. Sprinkle any remaining cracker mixture on the chicken and drizzle with any remaining butter. Bake until the chicken is golden brown, 25 to 30 minutes.                            
Today I'm planning to make Hot Cross Buns, at my ten-year-old's request.

  2. The chicken recipe looks great - I'll need to try it! I never thought about making hot cross buns outside of Lent {because my momma didn't} but why not??! I just might try that to!
